While many restaurants are cutting hours or day-parts and struggling to maintain their typical standards of service quality when they are open, Belton’s Mosaic Grill is having no problems delighting the droves of diners attracted to the new eatery’s eclectic menu.
Most of the restaurant’s staff stays in the open-concept kitchen, furiously working like a well-oiled machine to get orders on the table or ready for pick-up with impressive speed. The dining room staff brings out the food and helps new customers get acquainted with the menu and how to order. The ordering for dine-in, carry-out, and delivery orders is mostly done self-serve, leveraging tech powered by Toast. Drinks, even beer and wine, are self serve.
All the tech and speed in the world would not matter if the food and beverages on offer were not tasty. Mosaic’s chef Hani has 23 years of culinary experience that range from international fine dining to serving celebrities and royalty. Hani’s specialties include kabobs, burgers, inventive and traditional salads, healthy sandwiches and wraps, and shawarma.
My first visit was at 6 p.m. on a Friday evening. The place was packed. Still, despite the crowd and only two staffers in the dining room, dine-in, carry-out, and deliver orders were all coming out of the kitchen like clockwork, the restaurant was clean, and everyone was enjoying themselves in an atmosphere that feels more like a nice casual dining establishment than a quick-service restaurant in a busy strip center.
My Shawarma Wrap was brought out to my table about five minutes after I ordered it. The presentation was good and the flavors better. It was filling, but not heavy. The shawarma, available in chicken or beef varieties, is a house-specialty as Hani was born in Jordan, the region where shawarma was invented.
